I asked my husband if there was anything he wanted me to post and he said the zucchini dish I make mostly during the summer because we have fresh(I cook mostly by site and taste so recipes are not always written down, but this is pretty easy).

What a neat way to reinvent a side dish! I think this cream sauce would be delicious on most any fresh vegetable.


zucchini (3 if you use the size you get in the store)
medium onion sliced in rings cut in half
1/2 c
1/4 c
butter or margarine
1/2 to 1 c
sour cream (can use up to 1 cup depending on how creamy, i usually use 1 cup)
1 Tbsp
corn starch mixed in a little water for thickening
salt and pepper to taste

Directions Step-By-Step

Slice zucchini into 1/2 inch rounds. Add water, zucchini, onion and butter/margarine and cook over medium to low heat until zucchini is very tender and onion is translucent.
Turn heat down very low, add sour cream and mix completely. If too thin, a little corn starch/water mix can be added to thicken.

Very tasty! Added some garlic powder and thyme for a little added flavor.

Dottie, your additions sound wonderful. Would you please consider entering your own recipe [maybe a Kielbasa & Zuchini]? I think it sounds delicious & would be a main dish/entree. I especially like the ginger & chive additions. Oh boy, now I'm drooling. Please consider this idea!!! TY

I added a few of my favorite spices/herbs like some garlic, smoked paprika, ground ginger, chives, and parsley then added fried kielbasa to this and served it with mini bow tie pasta noodles. My whole family loved this recipe, even my 9 yr. old who insists he hates zucchini. My kids say it's a keeper and I have to agree.
