Ingredients

3 zucchini (3 if you use the size you get in the store)
1 medium onion sliced in rings cut in half
1/2 c water
1/4 c butter or margarine
1/2 to 1 c sour cream (can use up to 1 cup depending on how creamy, i usually use 1 cup)
1 Tbsp corn starch mixed in a little water for thickening
salt and pepper to taste

I asked my husband if there was anything he wanted me to post and he said the zucchini dish I make mostly during the summer because we have fresh(I cook mostly by site and taste so recipes are not always written down, but this is pretty easy).

What a neat way to reinvent a side dish! I think this cream sauce would be delicious on most any fresh vegetable.

 

Directions

Slice zucchini into 1/2 inch rounds. Add water, zucchini, onion and butter/margarine and cook over medium to low heat until zucchini is very tender and onion is translucent.

Turn heat down very low, add sour cream and mix completely. If too thin, a little corn starch/water mix can be added to thicken.

Definitely will make this again. It was great! I used a little less onion since not everyone in my family is wild about onion. I also used 1/2 cup sour cream. Will either use more next time or else increase the amount of corn starch since the sauce was a little runny. I may experiment with throwing some fresh herbs in next time, too.

I make an old fashioned recipe that was handed down from the South. We used yellow squash. Creamy yellow squash. Lots of black pepper to taste. It's like a squash soup. MMmmmmm So Good! I have a 30 year son that would replace this instead of a snack. He lost 40 pounds!
