Had a cucumber, green pepper, onion and what else to make with these ingredients is a salad. I had forgot that I use to make this often when I first got married. Made it and shared it with my neighbor which loved the taste. Cooking for two isn't easy some times. This is a keeper during these hot summer days when you don't really want to heat up the kitchen. Enjoy!

Ingredients For my cool salad for a hot summer day

  • 1 lg
    tomato, cut into pieces
  • 1 md
    cucumber, peeled and sliced
  • 1/4
    of a large onion, cut into slices
  • 1 lg
    green pepper, cut into pieces
  • 1/4 c
    apple cider vinegar
  • 4 Tbsp
    sugar ( use less for more tang ) if desired
  • 1 tsp
    celery seed
  • salt and pepper to taste
  • top with crumbled feta chees if desired

How To Make my cool salad for a hot summer day

    Cut all vegetibals into disired size pieces along with sliced cucumber.

    Place into a large mixing bowl and add vinegar, sugar, celery seed, salt and pepper to taste and mix well to cover all.

    Cover and place in refrigerator to cool.

    Serve as a side dish along with your favorite BBQ meats.

    NOTE: Double the vegetables for a larger group of people.
