Mozzarella Spaghetti Squash Casserole

This dish is smothered in mozzarella, though not included in picture.

I have served this as a main dish, as well, by adding lamb chunks and wine.

Ingredients

1
spaghetti squash
oil for roasting
1 tsp
season salt for each half
1/4 stick
butter, cut in pieces
1 Tbsp
ground oregano
1 Tbsp
italian seasoning
white pepper to taste
1 lb
shredded mozzarella

Step-By-Step

1Take squash and cut in half. Remove seeds.
2Rub squash with oil and sprinkle on season salt.
3Place in oven at 400F until tender.
4Allow to cool until able to be handled, with shred inside with a fork. Place all innards in the greased, square casserole dish.
5Add the butter and the seasoning. (I took a picture at this point and the finished picture did not save. I wasn't aware of this until it was eaten.)
6The sprinkle on cheese very thickly. Place in oven at 350F on the cheese is bubbling and achieving a golden brown.
