Nothing says summertime like watermelon and cantaloupe. This is a very refreshing summertime treat.

Ingredients

1/4 c
fresh lime juice
2 Tbsp
firmly packed light brown sugar
3 c
chopped seeded watermelon
1 c
chopped seeded cantaloupe
1 c
peeled, chopped seedless cucumber
1/2 c
minced red onion
1/4 c
minced red bell pepper
1/4 c
chopped fresh mint
2 Tbsp
finely chopped crystallized ginger
1 to 2 Tbsp
minced seeded jalapeno pepper, or to taste
salt and pepper, to taste

Directions Step-By-Step

Whisk together the lime juice and sugar until sugar dissolves. Add remaining ingredients and gently toss to combine.

Season lightly with salt and pepper. This can be prepared up to two hours in advance. Strain before serving.
