Mashed Sweet Potatoes with Anaheim Chiles

- 1 large sweet potato, peeled and cubed, 10 to 12 oz
- 2 tbsp. unsalted butter
- 1 anaheim chile, seeded and sliced
- salt and black pepper to taste
1Boil sweet potato in salted water in pan over high heat til tender, about 10 minutes.
2Drain potato and return to pan to dry briefly over medium heat.
Mash potato to desired consistency. Stir in butter and chile. Season with salt and pepper.
