DRESSING

1/2 c
olive oil
1/4 c
white wine vinegar
1 Tbsp
italian seasoning
1 Tbsp
dijon mustard
1 clove
garlic
3/4 tsp
salt
1/2 tsp
sugar
1/2 tsp
black pepper

VEGETABLES

1 large
cauliflower
1 bottle
bottled cherry peppers
1/2 bottle
bottled yellow pepper rings
3 medium
carrots
1 bunch
dinner onions or one medium red or white onion
1 large
cucumber
1 c
chinese pea pods
1 c
olives, pitted (green or black) optional

Directions Step-By-Step

In a small bowl, whisk together the olive oil, vinegar, Italian seasoning, Dijon mustard, garlic, salt, sugar, and pepper. Can use an immersion blender, if you are to lazy to whisk. taste, adjust seasonings, if needed

Rinse vegetables and cut into desired sized pieces, combine the rough chopped vegetables in a large bowl . Traditional bite size, is a good idea.

Pour the dressing over the vegetables, tossing gently to coat. Cover and refrigerate for at least 4 hours or up to 24 hours, stirring occasionally.
