Ingredients For marinated mushrooms

  • 8 oz pkg
    baby portobello mushrooms, gills & stems removed, chopped
  • 1/4 c
    water
  • 1/4 c
    + 2 tbsp balsamic vinaigrette dressing, divided
  • 1 tsp
    garlic salt
  • 1/2 tsp
    pepper
  • 8 oz
    monterey jack cheese with jalapeno peppers
  • 3 Tbsp
    sunflower seeds, shelled, toasted
  • 1 Tbsp
    lemon juice
  • 4
    scallions, sliced (both greens & whites)

How To Make marinated mushrooms

  • 1
    Place mushrooms in a medium saucepan with water, 1/4 C vinaigrette, garlic salt & pepper. Cover & bring to boil on high; then boil 5 more minutes. Drain & let cool, 15 minutes.

    Cut cheese into bite sized pieces & add to medium bowl. Stir in mushrooms, seeds, lemon juice, remaining vinaigrette & scallions; mix well. Refrigerate, covered, about 4 hours.
