This is usually a side dish, but can be served as a main entree, just add Shrimp, Crawfish, fish, or chicken!

Ingredients

3 c
yellow corn
3 c
white shoepeg corn
1 medium
onion, chopped
1/2
bell pepper, chopped
1
stalk celery, chopped
1
green onion chopped
1 Tbsp
bacon drippings
cayenne pepper, salt, and black pepper to taste
*note* if topping with a meat of some sort, do not add the following*
1 c
either cubed beef, ham, or bacon
1 can(s)
diced tomatoes (you can use a small can, or a large can, it is up to you as per taste
1 c
heavy whipping cream

Step-By-Step

1In a pot over med. heat, cook the onions and meat until they are brown. (if using seafood as a topper, just brown the onions in oil)

2add bell peppers, and celery, and saute them. Add tomatoes, and corn, saute 2 min. Add whipping cream, cover and let simmer on low heat for 30 min.

3Add green onions and seasonings, and let simmer, covered for another 10 min.

4Top with your favorite cooked, shrimp, crawfish, seafood, or chicken, or serve as a side dish
