Ingredients For lisa's corn fritters

    ears sweet corn, cooked
  • 2
    eggs, beaten
  • 1/4 c
    milk
  • 1/2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    sugar
  • 1/2 tsp
    salt
  • 1 Tbsp
    bacon drippings or vegetable oil
  • butter or maple syrup (optional)

How To Make lisa's corn fritters

  • 1
    Cut kernels from corn and place in a medium mixing bowl; stir in eggs and milk. Combine flour, baking powder, sugar and salt in a small bowl; stir into corn mixture, and mix gently. Heat bacon drippings or vegetable oil in a skillet over medium-high heat. Drop batter by 1/4 cupfuls and cook until delicately browned, turning to brown the other side. Serve with butter and maple syrup, if desired. Makes one dozen.
