This is a delicious way to use leftover mashed potatoes! Can be served for breakfast, lunch dinner, or a snack!

Ingredients For leftover mashed potato puffs

  • leftover mashed potatoes
  • 1
    egg
  • 1 c
    mixed shredded cheeses of choice
  • chopped green onion
  • salt and pepper
  • 2
    beaten eggs
  • seasoned flour
  • breadcrumbs
  • parmesan cheese

How To Make leftover mashed potato puffs

    Mix Potatoes, egg, cheeses, onion, salt and pepper to taste. Refrigerate to set about a half hour

    Roll potatoes into small log shapes about two inches long
  • 3
    Roll logs into flour, then beaten egg, then breadcrumbs mixed with parmesan cheese. Can be fried in oil immediately, or refrigerate again to set about a half an hour to ensure a crispy crust. Fry in 1/4 inch of oil heated to 350 degrees until golden brown and crispy.
