Kale is as good for you as it is not tasty. Here's a wonderful way to make it irresistible to even your pickiest eaters.

Ingredients

4 c
chopped kale
2 c
italian bread crumbs
1 c
parmesan cheese
3
eggs
salt and pepper to taste
1/4 c
shredded mozzarella (optional)
jarred marinara (optional)

Directions Step-By-Step

preheat oven to 375 degrees
coat a baking pan with non-stick spray

combine finely chopped kale with beaten eggs, add salt and pepper to taste (remember that your bread crumbs are seasoned already), add Parmesan cheese and mix well, add bread crumbs 1/4 cup at a time until incorporated fully

spoon out 1/8 cup of mixture, form into a ball and slightly flatten into a cake, place on cookie sheet spaced 1/2 inch apart
Bake for 30-40 minutes until golden brown

optional........sprinkle with shredded mozzarella and serve with warm marinara
