Stir in the streetside excitement of a food truck favorite with a sumptuous blend of sweet or spicy seasonings and serve up chips as a delicious dessert, savory side or a meal in itself. I got this recipe from a food supply magazine that I subscribe to, I know the "recipes aren't very detailed but you can get the idea of what to do to create these wonderful "chips"...so far I have made the plantain chips and the garlic chips(using elephant garlic). I can't wait to serve some of them at my next barbeque :o)

Ingredients

CRISPY EGGPLANT CHIPS: FRY EGGPLANT AND DREDGE IN POWDERED SUGAR, CORNSTARCH, PANKO AND SALT.

YUCA CHIPS: SLICE YUCA ON A MANDOLINE, FRY AND SALT TO TASTE.

PLANTAIN CHIPS: FRY PLANTAIN STRIPS THEN COAT WITH LIME ZEST, SALT AND CAYENNE PEPPER.

GARLIC CHIPS: BOIL MILK AND GARLIC SLICES TO CUT GARLIC FLAVOR. FRY GARLIC AND SEASON TO TASTE.

TOMATO CHIPS: SPRINKLE SLICES OF TOMATOES WITH SALT AND PEPPER AND BAKE ON LOW HEAT FOR 1 TO 2 HOURS

TURNIP CHIPS: COAT WITH OIL AND TURMERIC PASTE, SEASON WITH SALT AND PEPPER, AND THEN PLACE BACK IN THE OVEN.

CRISPY BEET CHIPS: COAT BOTH SIDES OF BEET WITH OIL AND SPRINKLE WITH SALT AND PEPPER, ROASTING ON EACH SIDE FOR 10 TO 12 MINUTES

CRISPY PARMESAN BUTTERNUT: SQUASH CHIPS THINLY SLICE ON MANDOLINE THEN CHILL SLICES. FRY, ADDING FRESH HERBS AND PARMESAN AFTER REMOVING FROM OIL.
