My Vegetarian rice recipe For lovers of all things HOT, and CHEESY!!! This dish is considered a complete protein. This is my own recipe! ENJOY!

Ingredients For hot vegetarian rice and beans

  • 1 c
    brown rice
  • 10
    pickled jalapeno slices (cut into pieces)
  • 1/2 c
    cherry tomatoes (cut into quarters)
  • 1/2 c
    diced onions
  • 2 c
    water
  • 1/4 tsp
    salt
  • 1 Tbsp
    butter, cold
  • 1 3/4 c
    shredded, sharp, chedder cheese
  • 1 can
    dark red kidney beans (drained, not rinsed)

How To Make hot vegetarian rice and beans

    Cut jalapeno's, tomatoes, and onions. Set aside.

    In a medium sauce pan, bring the water, butter, and salt to a boil.
  • 3
    When the water comes to a boil, add the rice, jalapeno's, tomatoes and onions. Cover with a tight lid and reduce heat to Med-Low. Cook for 45min's.

    When the rice is finished cooking, add cheese and kidney beans. Turn heat up to medium and stir until kidney beans are warm and cheese is melted!
