Ingredients For honey glazed carrots

  • 2 lb
    carrots, baby
  • 1/4 c
    green onions, finely chopped
  • 1/4 c
    butter
  • 1/4 c
    honey
  • 1 tsp
    orange peel, grated
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon, ground
  • 1/4 tsp
    pepper
  • 2 tsp
    cornstarch
  • 1/2 c
    orange juice
  • 4 tsp
    mint- or- parsley ( flat leaf) - fresh, minced

How To Make honey glazed carrots

  • 1
    Place 1 inch of water in skillet, add carrots. Bring to a boil. Reduce heat, cover and simmer 15-20 minutes or until crisp tender. Drain & set aside.

    In the same skillet, saute green onions in butter until tender. Stir in the honey, orange peel, salt, cinnamon and pepper. Combine cornstarch & orange juice until smooth, stir into onion mixture. Bring to a boil, cook & stir for 1-2 min. or until thickened.

    Return carrots to the pan. Cook & stir for 2 min. or until heated through. Sprinkle with mint.
