salt

1MIX ZUCCHINI WITH SALT AND LET STAND 15 MIN. SQUEEZE MOISTURE OUT WITH YOUR HANDS.

2LIGHTLY BEAT THE EGGS. STIR EGGS, CHEESE, GARLIC AND SALT AND PEPPER TO TASTE.

3MELT BUTTER IN LARGE FRYING PAN, SPOON MIXTURE INTO PAN IN MOUNDS OF 2 TBLS. EACH; FLATTEN SLIGHTLY. (PATTIES SHOULD NOT TOUCH) COOK UNCOVERED, TURNING ONCE, TILL GOLDEN BROWN.
