2 medium
zucchini
2 medium
yellow squash
2 medium
green tomatoes
1 Tbsp
parsley
1 tsp
oregano, fresh
1 tsp
thyme, leaves
1 tsp
basil, fresh
1 tsp
rosemary sprigs
olive oil, extra virgin
sea salt
pepper

Directions Step-By-Step

CHOP ALL THE FRESH HERBS AND MIX TOGETHER IN A BOWL. CUT ZUCHHINI AND YELLOW SQUASH IN HALF LENGHWISE. ON THE SKIN SIDE, TAKE A FORK AND SCORE THE WHOLE LENGTH OF THE VEGGIES TWICE. SLICE THE TOMATOES ABOUT 1/4 INCH THICK. DRIZZLE EVO ON ONE SIDE OF THE TOMATO AND THE SKIN SIDE OF THE SQUASH AND ZUCCHINI. SALT AND PEPPER TO YOUR TASTE. TURN THE VEGGIES OVER AND DRIZZLE WITH EVO AND SPRINKLE WITH THE HERBS.

PLACE SALT AND PEPPER SIDE OVER MEDIUM HEAT ON GRILL ABOUT 10 MINUTES. TURN OVER AND GRILL THE OTHER SIDE.
