I serve this delicious side dish w/ my lemon-sage roast chicken. They go very well together. The Italian dressing gives this dish a wonderful, light flavor.

Ingredients For green bean & bell pepper toss

  • 12 oz
    fresh green beans, trimmed
  • 1 sm
    green bell pepper, thinly sliced
  • 1 sm
    red bell pepper, thinly sliced
  • 1 sm
    shallot, chopped
  • 2 Tbsp
    light italian dressing
  • 1 Tbsp
    fresh oregano, chopped.
  • salt & pepper to taste

How To Make green bean & bell pepper toss

    In saucepan of boiling salted water, cook green beans 2 mins, or until crisp-tender, drain well.

    Spray a skillet w/ cooking spray, place over medium heat. Cook peppers and shallots in italian dressing 2 mins, or until peppers are tender, stirring constantly.

    Stir in green beans and oregano. Cook 1 min or until heated through. Season w/ salt and pepper.
