Ingredients

4 medium
eggplants
1 c
all-purpose flour
1 c
ground cornmeal
salt and pepper to taste

eggs

Step-By-Step

1slice your eggplant in 1/2 inch slices. combine the flour and cornmeal to coat the eggplant also beat your eggs in a seperate bowl. salt and pepper the eggplant role in egg and role in flour cornmral mixture. place the coated eggplant in a large skillet with about 1/4 cup veg oil thats hot fry turning occasionally for about 25 minutes or until eggplant is golden brown serve
