Fresh Corn Salad

This is a perfect summer salad as it can be served cold or room temperature. Perfect for summer potlucks!!! I also enjoy it in the winter. Either fresh corn or frozen can be used, either way it is always bright and refreshing.

Ingredients

2 1/2 c
corn, fresh or frozen, cooked
1 small
red onion, diced
3 Tbsp
cider vingar
3 Tbsp
olive oil
1/2 tsp
kosher salt
1/2 tsp
black pepper
1/2 c
fresh basil (i usually use 1 table. dry basil, more or less depending on your taste)

Directions Step-By-Step

Cook your corn as directed. Toss everything together, unless you are using fresh basil. If using fresh basil add that just before serving.

This can be served cold or at room temperature.
