Looking for new ways to eat veggies, so we tried this,and it was really good. we will be having this one again. Hope you try it and enjoy it as much as we did.

Ingredients For fresh baked squash casserole "gf"

  • 1 md
    zucchini
  • 1 md
    yellow squash
  • 1 md
    sweet onion
  • 1 tsp
    dried chives
  • 2 pinch
    garlic and herb seasoning
  • 1/2 c
    oscar mayer,real bacon bits-hickory smoke
  • 2 Tbsp
    olive oil- for pre-cooking ingredients
  • CAN OF ZINNIE -CUT OR DICE UP IN CAN BEFORE PUTTING IN."DEL MONTE ZUCCIHIN WITH ITALIAN -STYLE TOMATOE SAUCE
  • 3/4 c
    bisquik "gluten free" " bisquick topping. !!!!! "
  • 3/4 c
    milk or rice mlik
  • 2 Tbsp
    grape oil or olive oil
  • 1 lg
    egg
  • 8 md
    grape tomatoes , sliced put on casserole before bisquik topping

How To Make fresh baked squash casserole "gf"

    Dice the onions into small pieces,sit aside Slice zennie and yellow squash into thin slices,sit aside. Sometimes I will add some sliced precooked carrots chop up fine 2 basil leaves to put on later.

    In a large skillet put 2 Tsp olive oil let it warm not hot, put your onions in to turn truculent not brown,now put your sliced squash in skillet,cook over med high heat,just till there tender."slowly" This where I add the can of Del Monte Zucchini but before adding it chop it up fine in the can so it is mostly like a heavy sauce, Add the bacon bits, and garlic powder, stir some till mixed. (cover and watch so it don't brown or burn.)When squash is just tender...remove and put in casserole bowl to fit veggies.put my sliced cherry tomatoes on top now.

    sprinkle some chives on it, NOW,lets make the topping, with ingredients from above. It should not be too thick, should be a little on the thin side. so if too think add a little more milk or water.as you want it to just pour over the veggies.

    Now, put into your oven at 350 for 10 min,than to brown the crust turn up to 375 till nice color that looks like a biscuit. Take out and ENJOY.
