Ingredients

1 lb
pound red potatoes

carrots, peeled and sliced

jalapeno chilies

cloves of garlic

bay leaves

peppers, cut and strips
1
onion, cut into strips
1 c
apple cider vinegar
1 tsp
oregano
1/2 tsp
salt
1/2 tsp
sugar

Directions Step-By-Step

Put potatoes in a Smart Steamer with water in base. Cover and steam for 5 minutes.
Add the carrots, cover and steam for 5 minutes more or until potatoes are soft.
Remove from Smart Steamer and pass through cold water to cool quickly vegetables.
Put in a bowl /Pick-a-Deli with all remaining ingredients. Cover and refrigerate at least 1 hour or overnight, stirring occasionally.
Serve cold
