1Select round medium sized tomatoes, cut a this slice from the top of each and scoop out enough pulp to leave a space large enough for an egg.
2Season cavities with salt and pepper, and drop an egg into each tomatoe. Cover the bottom of a baking pan with hot water or butter, put the tomatoes in and bake about 10-12 minutes at 360 F. season with butter and serve on toast, garnish with parsley.
