Who does not like potatoes stuffed with all the goodies, such as sour cream, bacon, cheese, chives, and tomatoes? This is similar to having a potato BLT without the lettuce. Rich in flavor and easy to assemble. Enjoy!

6 oz

1/2 c

Directions Step-By-Step

1
Pierce and place potatoes on dark baking sheet and bake at 400 degrees for approximately 35 minutes (turning over occassionally), or until tender when pierced with a fork. Half potatoes and place in a greased baking dish with cut side facing up. Using a fork, lightly smash the inside of each potato. Sprinkle with salt and pepper. Pour melted butter over potatoes.
2
Spread sour cream on all potatoes. Then add shredded cheese, crumbled bacon, green onions, and tomatoes. Return to oven and bake for approximately 10 -15 minutes, or until cheese is melted.
3
Serve with a dollop of guacamole salad on top. Note: You can purchase packaged guacamole in market or prepare your own.
4
Quick guacamole salad: Mash 2 peeled and chopped avocadoes with a fork. Add chopped onion, garlic powder, salt and pepper (be generous with these spices for good flavor), and several tablespoons of Picante Sauce. Add a few drops of lemon juice to prevent discoloration of avocado.
