We stumbled across this recipe when we started to diet and wanted a really tasty veggie side dish. This was the first time I ever ate Brussels sprouts and I can't live without them now! This is a must have recipe. It's too simple not to try.

Clean Brussels and cut in half. Remove some outer leaves, they will fall off anyway. On med high heat put a generous amount of olive oil in skillet, and let warm a little. Place Brussels in oil and stir enough to coat all the Brussels. Then turn all Brussels with cut side down and cook med high for 5 mins, or until brown on bottom. Stir and reduce heat to low and cover cooking for about 10 mins depending on if you like soft Brussels or if you like em to have a little crunch like my family. Remove from skillet and generously salt and pepper. I like em best with baked chicken breast and sautéed mushrooms. Delicious!!! Enjoy!

There are diff variations to this recipe as well. You could add red onion, asparagus, and half a small package of real bacon bits and it is also very delicious. To cook this way, start with a little oil and half a small onion on med heat. Cook about 4 mins, while that is cooking start the Brussels in a separate skillet until browned as directed above. Add asparagus and the browned Brussels to the onions lower heat about half and cover for 5 mins, add the bacon bits cover another 5 mins. Salt and pepper generously before serving. This is a great side for a family dinner. Makes enough for everyone.
