My daughter surprised me with this simple, yet tasty squash. I was out weeding and when I came in, she served me the plate in the photo. Was almost too easy of a recipe to post, but seeing she took the initiative to cook something on her own, I decided to post it. It really was yummy! I was looking for more...LOL! I might make a cook out of her after all. :)

Enjoy!

Saute

Ingredients

1 medium
yellow squash - quartered and sliced about 3/4 inch thick
1 small
zucchini - cut in half and sliced
2 Tbsp
olive oil - divided
1 tsp
butter
2 clove
garlic, finely minced
1/4 tsp
red pepper flakes
1/2 tsp
dried onion - or could use fresh
pink
salt & fresh cracked pepper to taste

Directions Step-By-Step

1
She added the squash to a bowl, sprinkled with about 1 tablespoon olive oil, added salt and pepper.
2
In a medium skillet over med heat, she added 1 tablespoon olive oil and the butter. Add the squash, garlic and onion, Stir, cover and cook for 10 - 12 minutes. It steamed nicely, wasn't mushy...she ended up with the perfect texture. Just right!

Serve hot! This made somewhat of a sauce, which if vegetarian would be great served over some pasta.
