Curried Squash

You can use either yellow squash or zucchini. Perhaps even a winter squash like butternut. I haven't tried that but it would probably be good.
Make sure you stir the coconut milk as it separates in the can.

Ingredients

yellow squash
1/2
onion sliced
2 clove
fresh garlic or 1/2 t garlic powder
1/2 can(s)
stirred coconut milk
1 heaping tsp
red curry paste
1/2 tsp
curry powder
1 Tbsp
sugar
salt and pepper to taste

Directions Step-By-Step

Prepare squash and slice into rounds. Do the same with the onion. Saute both in a skillet with a little oil until begins to brown just a little. Then add the curry powder and curry paste, salt and pepper and let the curry paste dissolve into the squash juices.

Add in the coconut milk and sugar cover and let cook on low till squash and onion are tender.

Serve as a side with and Asian main dish.
