Creamy Chicken & Broccoli

This recipe is from the cookbook "Grandma's House Restaurant & Family Recipes". I bought it at Grandma's House in Yreka, CA. Grandma Doyne passed away, but her family still runs the restaurant. I've visited there twice myself & seen many rave reviews, & have never seen one complaint about their excellent home style foods. This recipe is yummy with broccoli, & used zucchini instead with equally great results. Hubby doesn't even care for zucchini, but he ate this when I made it. Another way is to add ham for a tasty main dish.

Ingredients

1 lb
chicken breast fillets
1 bag(s)
(1lb.) frozen broccoli florets
1/2 c
miracle whip, regular or light
1 lb
velveeta cheese
salt & pepper, to taste

Directions Step-By-Step

Cut chicken into bite-size pieces & brown in large skillet over medium heat. When browned, reduce heat to low.

Cube Velveeta & add to chicken mixture in skillet, letting it melt & making sure it doesn't scorch.

After cheese melts, add broccoli. Cover & simmer til broccoli is fork tender. Serve over cooked rice or pasta.
