Creamed Corn with Bacon

I found this recipe in one of the groups in a response to where a member had asked for a recipe. This was the answer a member posted and I couldn't find where she had the recipe saved online. Thank you for this recipe, Annette W. greeneyez. I wanted it here where I am putting all my recipes now. I love this website. Annette said this recipe was from Southern Living. She did not give a name, but the member had requested a recipe for "Confetti Corn". This sounds so yummy.

Ingredients

8 slice
bacon
6 c
fresh sweet corn kernels
1 c
diced sweet onion
1/2 c
red bell pepper, chopped
1/2 c
green bell pepper, chopped
8 oz
cream cheese, cubed
1/2 c
half and half
1 tsp
sugar
1 tsp
salt
1 tsp
pepper

Directions Step-By-Step

Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Remove bacon, and drain on paper towels, reserving 2 Tbsp. drippings in skillet. Coarsely crumble bacon.

Saute corn and next 3 ingredients in hot drippings in skillet over medium-high heat 6 minutes or until tender.

Add cream cheese and half-and-half, stirring until cream cheese melts. Stir in sugar, salt and pepper.

Transfer to a serving dish, and top with bacon.
