Ingredients
- 2 1/2 cups corn, frozen, thawed
- 1 - 15 oz cans creamed corn
- 3 x large egg whites
- 8 ounces cheddar cheese, shredded
- 1/2 teaspoon paprika
- 3 scallions, chopped
- 1/2 small onion, chopped
- 1 1/2 teaspoons salt
- 1 teaspoon baking powder
- 1 1/2 cups whole wheat flour
How To Make cornballs

Step 1Preheat oven to 400 degrees F. Lightly mist your mini muffin tins with cooking spray.

Step 2In a large bowl, combine everything except the baking powder & flour & stir. When mixed, add the flour & baking powder & continue to stir together until combined.

Step 3Using a tbsp, scoop heaping tbsp of the mixture into each space in the mini muffin tin. The recipe makes 40 cornballs so you may need to bake more than on batch.

Step 4Bake for 16 - 18 minutes or until a toothpick inserted into the middle comes out clean.
