Ingredients

  • 2 1/2 cups corn, frozen, thawed
  • 1 - 15 oz cans creamed corn
  • 3 x large egg whites
  • 8 ounces cheddar cheese, shredded
  • 1/2 teaspoon paprika
  • 3 scallions, chopped
  • 1/2 small onion, chopped
  • 1 1/2 teaspoons salt
  • 1 teaspoon baking powder
  • 1 1/2 cups whole wheat flour

How To Make cornballs

  • Step 1
    Preheat oven to 400 degrees F. Lightly mist your mini muffin tins with cooking spray.
  • Step 2
    In a large bowl, combine everything except the baking powder & flour & stir. When mixed, add the flour & baking powder & continue to stir together until combined.
  • Step 3
    Using a tbsp, scoop heaping tbsp of the mixture into each space in the mini muffin tin. The recipe makes 40 cornballs so you may need to bake more than on batch.
  • Step 4
    Bake for 16 - 18 minutes or until a toothpick inserted into the middle comes out clean.
