Corn on the Cob Cocoons

Peggy Sue Ross

This is a wonderful twist to corn on the cob! The corn is spicy and tender! You can bake it at 350 or put it on your charcoal grill. Either way, get ready for a great new way to serve up an all American favorite.

1/2 c
mayonnaise or light mayonnaise
1 Tbsp
lime juice
1/2 tsp
garlic powder
1/2 tsp
ground cumin
ears corn, husks removed

1Heat grill (or oven to 350)
2Combine mayonnaise, lime juice, garlic powder and cumin.
3Place each ear of corn on a 12 inch square piece of foil.
4Spoon dressing mixture evenly over ears.
5Spread dressing mixture on all sides of corn, coating completely.
6Roll foil around corn, sealing ends.
7Place corn on grill over medium hot coals (or into oven directly on rack).
8Grill (or bake) 20-30 minutes or until tender, turning 1/4 turn every 5 minutes. Most people will not want to add anything! This is spicy, creamy, buttery and plenty salty too!
