Ingredients For corn fritters with salsa

  • 1/2 c
    flour
  • 1/2 c
    yellow corn meal
  • 1 1/2 tsp
    baking powder
  • 2 tsp
    sugar
  • 1/2 tsp
    sea salt
  • 3 lg
    eggs
  • 2/3 c
    milk
  • 1/4 c
    butter, melted
  • 2 c
    whole kernel corn, fresh or if frozen; rinsed and drained
  • 3
    green onions, chopped
  • 1/4 c
    vegetable oil, plus more for frying
  • 2 c
    fresh salsa

How To Make corn fritters with salsa

    In a large bowl, mix flour, cornmeal, baking powder, sugar and salt; set aside. In another bowl, whisk eggs with milk, melted butter, corn and green onions until mixed. Add milk mixture to the flour mixture; stir just until dry ingredients are moistened.

    In large skillet, heat 1/4 cup oil over medium heat. Drop tablespoonfuls of batter into fryer; cook until golden on both sides, turning once. Add more oil to pan if necessary.
