Ingredients

ears corn
1 c
grated zucchini
4 clove
garlic minced
2
green onions chopped
2 large
eggs
1/2 c
buttermilk
4 oz
goat cheese
salt and pepper
1 c
flour
1 tsp
baking powder
oil for frying
1/2 c
honey
1 tsp
red pepper flakes

Directions Step-By-Step

Mix the honey and red pepper flakes together and set aside.
Grill the corn to get a nice smoky char on them then cut the kernels off the cob.

In a small bowl mix the flour and baking powder together.
In a large bowl mix the corn kernels, zucchini, garlic, green onions, egg and the goat cheese together. Season with salt and pepper.

Stir in the flour mixture. Add oil to a large skillet. Pour small amounts of batter onto hot pan. Cook 3 minutes per side to get them browned and cooked through.

Serve drizzled with the honey mixture.
