Company's Coming Cauliflower!

1 large
cauliflower, small florets
1/3 c
green bell pepper
1/3 c
orange bell pepper
1/3 c
yellow bell pepper
1 c
diced onion
1 pkg
raw mushrooms, rough chopped
1 jar(s)
pimento (small jar) diced
1 bunch
green onion diced
1/4 c
1/3 c
all purpose flour
2 c
1/4 tsp
cayenne pepper
1 tsp
1 c
velveeta cheese shredded or a mix of cheddar & swiss shredded


1Cook cauliflower in boiling, salted water until barely tender, Drain

2While cauliflower cooks, drain the pimiento & dice, dice green onion, mix together & set aside.

3In a large skillet saute onion, mushrooms and peppers in butter until tender.

4Blend in flour, cook until bubbly, then gradually stir in milk, cook until thickened

5stir in salt, cayenne & cheese. Cook until cheese is melted.

6in a 2qt. casserole place 1/2 of cauliflower, pour in 1/2 of sauce, repeat. Cook 30 minutes or until bubbly

7Sprinkle green onion and pimiento mix over the top.
Serve! Good left over but does not freeze well.
