- cauliflower florets (1 large head)
- red onion, cut into 1/4-inch-thick slices
- juice from 1 large lemon
- 2 Tbsp
- olive oil
- 1/4 tsp
- black pepper
- 1/4 c
- sour cream
- 1-1/2 c
- finely shredded triple cheddar cheese
1Combine the first five ingredients and spread onto a foil-covered, rimmed baking dish.
2Bake in a preheated 450º oven for 40 minutes, stirring after 20 minutes.
3Add sour cream to vegetable mixture; mix well. Top with cheese; bake 5 minutes or until melted.
