Ingredients

6 large
leeks, trimmed and washed
olive oil
2 Tbsp
butter
5 sprig(s)
thyme, leaves picked
2 clove
garlic
½ c
half and half
4 oz
grated cheddar cheese
2 oz
parmesan cheese, grated
4 oz
brie cheese, diced

Step-By-Step

1Wash leeks thoroughly and then slice them diagonally, about ½-inch thick. Set aside.
2In a large skillet, heat a drizzle of oil, the butter, thyme and garlic over medium heat. As mixture begins to bubble, add leeks and simmer uncovered for about 35 minutes.
3Add salt and pepper to taste. Transfer mixture into a baking dish. Stir in the cream and a splash of water. Sprinkle the cheddar and parmesan on top and then add the cubed brie on top of all.
4Place in a preheated 350º oven for 20 minutes or until golden and cheese is melted.
