Ingredients For cheesy corn puffs

  • 1 c
    cream style corn, canned
  • 4 Tbsp
    butter, unsalted
  • 1 tsp
    salt
  • 1 3/4 c
    all purpose flour
  • 3 lg
    eggs
  • 1/2 c
    pepper jack cheese, shredded, plus more for topping
  • 1 Tbsp
    chives, bunch, fresh, chopped

How To Make cheesy corn puffs

    Preheat oven to 400 degrees F. Line 2 baking sheets with parchment paper. Bring the corn, butter & salt to a simmer in a medium saucepan over medium heat. Reduce the heat to low, add the flour & stir with a wooden spoon until the mixture is smooth & begins to pull away from the sides of the pan, about 2 minutes.

    Scrap the dough into a bowl; let cool slightly. Add tge eggs, one at a time, stirring well between each addition. Stir in the cheese & chives. Chill dough for 15 minutes.

    Scoop Tbsp size mounds of dough onto the prepared baking sheets, about 2" apart. Sprinkle with more cheese. Transfer to oven & bake until golden brown & puffy, 20 - 25 minutes. Serve warm.
