Sandra's Story

Just when I think cauliflower can't get any better! Well here we go!

Ingredients

1 large
cauliflower
2
eggs
1/2
chedder cheese, grated
1/2 c
panko bread crumbs
1/2 tsp
cayenne pepper
salt
olive oil

Directions Step-By-Step

Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste.

Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

This is a very good recipe. The only thing I did different, I dredged a little in flour before frying it. It help bind better and gave it more of a crunchy finish. Thanks for the share. LOVE IT.

I have a question about the recipe. It calls of 1/2 chedder cheese, grated. What does that mean? Is that 1/2 Cup or 1/2 pound of cheese?
