Ingredients For cauliflower pickles

  • 2 lb
    cauliflower, fresh
  • 1 c
    red wine vinegar
  • 1 c
    water
  • 2 tsp
    sea salt
  • 1 lg
    lemon, sliced
  • 3 clove
    garlic, minced
  • 1/4 tsp
    peppercorns
  • 1 qt
    canning jar

How To Make cauliflower pickles

  • 1
    Wash cauliflower & break into florets, cutting off any large stems.
  • 2
    Combine vinegar, water & salt. Set aside.
  • 3
    Place 2 slices of lemon on the bottom of a qt sized jar & with garlic & peppercorns.
  • 4
    Press cauliflower into prepared jar & top with brine. Place 2 - 3 more lemon slices on top & put lid on & refrigerate at least 12 hours or longer. Enjoy!
