Cauliflower Macaroni & Cheese

Wanting my kids to eat well I just love finding ways to sneak vegetables in meals. The sauce is good enough to ladle into a cup and drink by itself. Hope you enjoy!

Ingredients

1
head cauliflower head, in florets or chopped
1/2 lb
whole wheat rotini or macaroni pasta
2 Tbsp
butter
1/4 c
flour
1 1/2 c
milk
1 c
chicken broth
2 c
shredded cheddar
1 Tbsp
mustard (optional)

Step-By-Step

1Cook pasta al dente, adding cauliflower during last 3-5 minutes or so. Drain.
2Whisk flour into melted butter in a small saucepan for 1 minute then whisk in broth until smooth.
3Whisk in the milk & simmer until thickened, between 3-5 minutes. Stand with it & whisk occasionally.
4Stir in cheese & mustard. Add pepper to taste.
5Stir sauce into cauliflower & pasta.
6Optional: This can be baked in a greased baking dish with extra cheddar cheese sprinkled on top.
