Ingredients

1/2 lg head cauliflower
1 md carrot, grated
2 eggs
1/4 c flaxseed meal
1/4 c raw, unsalted sunflower seeds
1/4 c hazelnuts, finely chopped
1/4 c fresh parsley, finely chopped
1 tsp lime juice
1/2 tsp salt
1 Tbsp poppy seeds
1/4 tsp black pepper
1 tsp fresh thyme
1.2 tsp ground cinnamon
1/4 tsp smoked paprika

Ellen's Notes:

Any way you can prepare cauliflower is okay with me--it is one of my very favorite veggies. These fritters look and sound terrific!

Directions

Cut the cauliflower into small florets and place in the bowl of your food processor. Process on pulse until cauliflower has the texture of large grains of cracked wheat. Transfer to a large mixing bowl.

Add all the rest of the ingredients and mix until well combined.

In a large skillet, heat a splash of olive oil and carefully drop about 1/4 of a cup of mixture for each fritter.

Cook three or four fritters at a time for 2-3 minutes on each side, until golden brown, then keep warm while you cook the rest.

Cauliflower is one of my favorite veggies also. I've never seen or thought of frying it. Pinched. Thanks for showing me a new way of enjoying cauliflower.
