Cauliflower Egg Skillet

|Cooking Method:||Stove Top|
|4 to 6 large||eggs, lightly beaten with a fork|
|1 medium||cauliflower, cut small florets|
|1 tsp||popcorn salt (it's yellow with butter in it)|
|1 pinch||black pepper|
|2 medium||fresh green tops of shallots, finely chopped|
|3 Tbsp||butter or oil|

This recipe was in a stack of others with cauliflower in the recipe...from when I started organizing some of my recipes on scraps of paper,old envelopes,stick-ems and such, a very hard thing to do when you are hungry and tired of looking and sorting the piles of recipes I have over the years, many I can't remember where I got them...some from TV shows like Mr. Food..Julia Child...but I think my favorite was Graham Kerr and his show" the Galloping Gourmet"...maybe you have heard of him...
OMG I have so many boxes of recipes to sort....
Pour beaten eggs over florets and stir. Cook until eggs set up to your liking.But not too hard.
