Cauliflower Couscous with Provolone and Basil

great alternative to potatoes. I love cauliflower it is so versatile and can be made in many different ways.

Ingredients

1 large
head cauliflower
1/4 c
milk
5 Tbsp
butter
4 oz
provolone cheese shredded
1/4 c
fresh basil chopped
salt and pepper to taste

Step-By-Step

1Cut cauliflower into pieces. Process in batches in food processor until chopped fine.
2Add butter to skillet. Stir in cauliflower and saute until softened stirring often. Pour in milk and add shredded provolone. Cook until cheese is melted.
3Season to taste with salt and pepper. Stir in basil. Remove from heat and serve.
