Amanda's Notes:

I love cauliflower and found this in my mom's recipes. I modified it to use Velveeta instead of cheese whiz.

Comments from the Test Kitchen: Kitchen Crew

My 9-year-old grandson asks to take this dish in his school lunch! Now, when is the last time your kids requested cauliflower?? That's how much my family and the Crew loved this recipe. Perfectly creamy and delightfully filling. Enjoy!

Directions

1
Cook cauliflower until tender. Drain. Break into smaller pieces.
2
In a large casserole dish add cauliflower, mushroom soup and melted Velveeta cheese. Top with french fried onions.
3
Bake at 300F for 30-35 minutes.

Just made this for dinner. It was delish!! I made minor changes though for what I had on hand... I used 2 cups of shredded cheese in place of the Velveeta, and I topped it with buttery crushed cornflakes. Yum!!
