Extra carrots on hand? Here's a quick and easy way to get rid of them. I have also added onion in this casserole.

Ingredients

2 lb
peeled, sliced & cooked carrots
1/2 stick
butter or margarine, melted
1 Tbsp
granulated sugar
1 Tbsp
self-rising flour
1 c
milk
1 c
grated sharp cheddar cheese
salt & pepper (to taste)

Step-By-Step

1Cook carrots until fork tender then drain. Preheat oven to 350.
2Add all ingredients together and combine well. Pour into a greased casserole dish and bake on 350 for approximately 30 minutes.
