Ingredients For caramel tomatoes

  • 4 - 8 lg
    tomatoes
  • 1 c
    brown sugar, light
  • 1 Tbsp
    salt
  • 1 tsp
    black pepper
  • 4 - 8 Tbsp
    butter, unsalted, cut into tbsp pieces

How To Make caramel tomatoes

    PREPARE TOMATOES: Use a sharp paring knife to score an X at the base of each tomato. Carefully submerge the tomatoes in boiling water for 30 - 60 seconds. Cool the tomatoes in ice water for 1 minute, then use the knife to remove the skin.

    Preheat oven to 400 degrees F. Adjust oven rack to upper-middle position.

    Arrange tomatoes in large ovensafe skillet (i use cast iron), cored side up. Sprinkle wtih sugar, salt & pepper. Dot each with Tbsp of butter.

    Bake until tomatoes are tender & lightly browned, about 1 hour, basting with juices every 15 minutes.

    Transfer skillet to stovetop. Simmer over medium-low heat, basting every 5 minutes, until sauce is thick & syrupy, about 30 minutes. Enjoy!
