Slice the peeled sweet potatoes into rounds about 1/4 inch thick.
Add oil and butter to cast iron pot. Heat.
Add sweet potatoes. Sprinkle with salt. Then add sugar over the sweet potatoes. Stir.
Cover skillet. Reduce heat to low. Cook, stirring occasionally, for one hour or until the sauce is dark and the potatoes are candied. They should be tender, but a little hard around the edges.
