Butternut Squash Casserole
|1||peeled and diced butter nut squash|
|1/2 c||onion, diced|
|3||chopped sage leaves or 1/2 tsp dried sage|

Directionsbake or boil squash. I think baking adds more flavor
use butter or olive oil to saute onions till very soft.
Use a potato masher to mash up the squash and onions.Add mayo, butter, sage, brown sugar and salt/pepper
pour into a sprayed or buttered casserole dish.Top with the saltine crackers which have been tossed in melted butter and the grated parm.
Bake at 350 for about 45 min till browned on top and puffy.
