Buttercup Squash Casserole

Ingredients

buttercup squash
2 Tbsp
brown sugar
1/4 tsp
salt
1/4 tsp
cinnamon
1/4 tsp
nutmeg
2 Tbsp
butter
1 Tbsp
chives, fresh/chopped
5/8 tsp
nutmeg

Step-By-Step

1Heat oven to 350 degrees.
2Cut squash into quarters; remove seeds.
3Place, cut side down, in ungreased shallow baking pan.
4Bake at 350 degrees for 45 to 50 minutes or until tender.
5Cool slightly.
6Grease 1-quart casserole.
7Scoop squash pulp from skin; place in medium bowl.
8Discard skin.
9Add brown sugar, salt, cinnamon, 1/4 teaspoon nutmeg, and butter to squash.
10Mix with potato masher or fork until well blended.
11Spoon into greased casserole.
12Sprinkle with chives and 1/8 teaspoon nutmeg.
13Bake at 350 degrees for 20 to 25 minutes or until thoroughly heated.
