Broccoli Rice Cheese Casserole

Karen's Story

There are a lot of broccoli/rice/ cheese recipes out there. This is an original from the 70s. One suggestion is to mix all ingredients while the rice and broccoli are hot.


1 stick

1 medium
chopped onion
2 stick
chopped celery
1 clove
minced garlic
2 - 8 oz box
chopped broccoli cooked per directions
2 c
cooked rice
1 - 6 oz
jar cheez whiz
1 can(s)
cream of mushroom soup
salt and pepper to taste

Directions Step-By-Step

Preheat oven to 325. Saute onions, celery, and garlic in butter until onions are translucent.
Prepare rice and broccoli as directed.
Combine all ingredients in large mixing bowl. Spread mixture in 13" x 9" pan. Bake for 30 minutes or until golden brown.

    We've always called this "Green Rice!" Sometimes I throw in some sauteed mushrooms, and/or chopped leftover chicken or steak. Works great in a crockpot too. El Yummo!

    The only thing I don't like about the crock pot is you don't get that crusty top.

    I've made a similar version of this recipe. Difference is I add one can of cream of celery soup along with the cream of mushroom. 1 package of softened cream cheese . Top with Monterrey Jack cheese.
